Preheat oven to 375F/190C, line a baking sheet with parchment paper, or alternatively use a nonstick tray Wash the sweet potato clean under cold running water and pat it dry with a kitchen towel Using a sharp knife or vegetable peeler, peel the potato if you wish Cut the sweet potato into about ¼-inch thick rounds. If they are too thick, they will take longer to cook. If they are too thin, they might burn. In a mixing bowl, add the sweet potato rounds and drizzle with olive oil. Add garlic granules, fresh thyme leaves, fresh rosemary leaves, salt, and black pepper to taste. Toss everything together until the potatoes are evenly coated Spread the potatoes on the prepared baking sheet in a single layer. (You might need to use two baking sheets if they do not fit in one).
